Strawberry Crunch Cupcakes

Strawberry cupcakes are kicked up a notch with delightfully fluffy strawberry icing and a crunchy topping. These nostalgic strawberry crunch cupcakes capture all the flavors of a strawberry shortcake ice cream bar. Their pretty pink color makes them the perfect Valentine’s Day cupcake or a great treat for a baby shower or any other fun pink occasion.

Did your elementary school cafeteria have ice cream bars for sale for dessert?

Mine did, and one of my favorite treats to buy after lunch was one of those strawberry shortcake ice cream bars.

Do you remember them?

They had the strawberry ice cream center surrounded by a layer of vanilla ice cream all covered in those delicious, addicting shortcake crunchies.

The best. I loved those crunchies. They were my whole reason for buying those ice cream bars. And for looking to dessert at school lunches period!

Well, these strawberry crunch cupcakes are topped with my take on that crunchy strawberry shortcake coating.

And let me tell you, I can eat this homemade crunch coating by the spoonful. It is every bit as addictingly delicious as the coating on the ice cream bars.

These cupcakes are a bit more involved than some of my other recipes, but I promise you, they are worth it.

And we will take some shortcuts to get there so we aren’t working unnecessarily hard.

To start, we are going to make the strawberry cupcakes from a box mix. Because the cupcakes, while important, take a backseat to the all important icing and topping.

Those we aren’t going to cut corners with.

After you bake your cupcakes and let them cool, assemble the icing. In a large bowl, beat together the cream cheese, butter, and half of the package of jello mix.

Once mixed, add in the heavy cream. Then add in the powdered sugar gradually until the icing reaches the desired consistency.

Lastly, add a few drops of food color to make the icing so perfectly pink. The icing should be able to hold its shape without being too dense to work with.

Once the icing is finished, spoon it into a piping bag fit with a 1M piping tip. Pipe the icing onto each cupcake.

A couple of tips to pipe your icing and make the pretty swirls. First make sure you twist the top of the bag closed. If you don’t you will have a big mess. Next, use even pressure as you squeeze the piping bag.

If you don’t, the swirl will be kind of uneven and lumpy. And lastly, don’t worry too much about icing imperfections. You are going to cover them up with the crunch.

To make the crunch, grind up the golden Oreos in a food processor. Then add in the remaining jello mix and pulse to combine. Lastly, add in the melted butter, a little at a time until you see the mixture become a little moist.

Then resist the urge to eat all the crunchies with a spoon while you let it firm up a bit. Then break it into crumbles and spoon on top of your cupcakes.

The result? A perfect pink strawberry crunch cupcake that is light and fluffy and topped with irresistible icing and crunchies. Truly the perfect way to sweeten up Valentine’s Day.

So right now I’m in the middle of moving, but since Valentine’s Day is upon us I wanted to share with you this delicious and easy recipe for Strawberry Crunch Cupcakes.

If you’ve ever had Strawberry Shortcake Ice Cream Bars, then you know exactly how the cookie crumb coating on top of these cupcakes tastes (tongue twister lol).

You start off making the strawberry cake batter using a doctored recipe of white cake mix and strawberry gelatin.

Then you make a decadent strawberry cream cheese frosting. And you finish off these cupcakes with a strawberry flavored cookie crumb. You can watch me make these cupcakes below:

How to deal with Strawberry Crunch

Deliciously creamy custard with a vibrant strawberry throughout, finished off with a biscuit crunch.

FA Custard Premium/INW Custard

Custard Premium gave me a nice creamy custard, while combining it with INW Custard turned it into a truly deep, rich custard base for this particular recipe. It’s creamy, strong and a natural sweetness comes through.

INW Shisha Strawberry/FA Juicy Strawberry

Juicy Strawberry is another great strawberry flavouring from FA. It gives both a ripe and sweet taste, so really the best of both worlds. Shisha Strawberry I added to give vibrance and a long lasting strawberry flavour.

Meringue adds a touch of natural sweetness to the mix, while adding a creamy feel and also a bit of texture to the finished juice.

This flavouring speaks for itself and adds the biscuit crunch I wanted to implement to the custard and strawberry profile.

Besides adding a little more sweetness to the mix, it also gives me a great mouthfeel from the juice and bit more vibrance.

Strawberry Crunch Cake


  • 2 (8 inch round) French vanilla cake layers, baked and cooled
  • 2 (8 inch round) strawberry cake layers, baked and cooled

Strawberry Crunch:

  • 12 Golden Oreo cookies
  • 12 shortbread cookies (I used Lorna Doone)
  • 3 Tablespoons salted butter, melted
  • 1 cup freeze dried strawberries
  • Strawberry frosting:
  • 1 cup salted butter, softened
  • 2 Tablespoons heavy cream
  • 1 cup frozen strawberries, thawed and pureed (alternatively, you could use fresh)
  • 4 cups powdered sugar

Cream cheese frosting:

  • 4 oz cream cheese, softened
  • 1/2 cup salted butter, softened
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar


Prepare the strawberry crunch

  1. In the bowl of your food processor, pulse Golden Oreos and shortbread cookies until they are in coarse crumbs.
  2. Add melted butter and pulse until combined.
  3. Add freeze-dried strawberries and pulse until combined.

Prepare strawberry frosting:

  1. In the bowl of your mixer, beat butter on medium speed until smooth.
  2. Add heavy cream and strawberry puree, mixing on medium-low and scraping the sides of the bowl as needed until combined.
  3. With the mixer on low, slowly add powdered sugar until combined. Increase mixer speed to high and beat for one minute.


  1. Place one strawberry cake layer on a plate and frost generously with 1/3 of strawberry frosting. Repeat, alternating layers until assembled.

Prepare cream cheese frosting:

  1. In the bowl of your mixer, beat butter and cream cheese on medium speed until smooth.
  2. Add heavy cream and vanilla, mixing on medium-low and scraping the sides of the bowl as needed until combined.
  3. With the mixer on low, slowly add powdered sugar until combined. Increase mixer speed to high and beat for one minute.
  4. Frost the outside of the cake

Add strawberry crunch:

  1. Cupping some of the crumb mixture in your hand, work your way around the cake, gently pressing the crumb mixture into the frosting. Repeat until entire top and sides of cake is covered in crumbs.

A cheesecake made in the Instant Pot inspired by your favorite ice cream bar! Strawberry Crunch Cheesecake is creamy and full of strawberry flavor.

What was your favorite ice cream bar when you were a kid? Mine was the strawberry shortcake ice cream bar. That sweet strawberry flavor and cool vanilla ice cream…mmm…it takes me back!

I don’t pick up those bars often enough now that I’m a mom, but I do think it is fun to make desserts based off our childhood favorites.

Introducing the Strawberry Crunch Cheesecake!

Cheesecake in the Instant Pot

Have you ever tried to make cheesecake in the Instant Pot? Although we love baked cheesecakes, cheesecake in the pressure cooker comes out perfectly creamy. No cracks. It’s delicious and easy. And it only takes about 35 minutes to cook (be sure to plan time for the pot coming to pressure).

How to Make Strawberry Crumble

You’ll find several different ways to make strawberry crumble across the web. Some have wafer cookies, some have dried strawberries. But we use Oreos and Jello powder. Here’s how to do it:

  • Adding the vanilla cookies into a food processor and pulse until you get small crumbs.
  • Remove half of the cookies and place in a small bowl. Add the JellO mix and the whipped cream. Incorporate the whipped cream and JellO powder with a fork until all ingredients are combined. The mixture should clump up.
  • Place the strawberry cookie crumbs back into the food processor and pulse a few more times to combine.

This will give you nice crumbs that you can use on top of your cheesecake. You can even add them to a bowl of ice cream. They are so good!

How to Make Cheesecake in the Instant Pot

The first step is to mix the cheesecake. The important thing to remember when mixing cheesecake is to not overmix the batter after you add in the eggs. If you beat the eggs too much, the cheesecake will end up airy instead of creamy.

Make the crust.

  • Prepare a 7” springform pan with nonstick spray. Place the graham crackers in a food processor and pulse until you get a fine crumb.
  • Add butter and salt and pulse until combined.
  • Pour the crumbs into the bottom of the pan and use a clean hand or spoon to press into the bottom of the pan to form the crust. Place in the freezer.

Mix the cheesecake.

  • In a large bowl using a hand mixer (you can also use a stand mixer with a paddle attachment) cream the cream cheese for 3-4 minutes until there are no lumps and it is completely smooth. Be sure to scrape the bowl at least 2 times during this time.
  • Add in the sugar and flour and mix well until combined and fluffy. Scrape the sides and bottom of the bowl.
  • Add in the sour cream and vanilla extract and mix until just combined. Scrape the sides and bottom of bowl.
  • Make sure there are no lumps in the batter. If there is, mix for an additional few minutes.
  • Add the eggs one at a time, making sure to completely combine the first before adding the second. Be careful not to overmix here, you just want to mix long enough that you don’t see the yolk anymore.
  • Remove the crust from the freezer and add the cheesecake batter into the pan. Tap the pan on the counter a couple of times to remove any air bubbles.

Cook the cheesecake.

  • Cover the spring form pan completely with aluminum foil making sure to seal well around the top.
  • Using another piece of aluminum foil, make a sling by folding the foil from long end to long end. Place underneath the cheesecake to help you drop it down into the Instant Pot.
  • Prepare your Instant Pot by adding in the trivet and adding one cup of water.
  • Place the cheesecake on the trivet and seal the lid.
  • Set your pot on high pressure for 35 minutes and allow to naturally release.
  • Once you can open the lid, remove the cheesecake, allow to cool on the counter.

How long do you let cheesecake set?

You should let this cheesecake cool to room temperature after removing from the Instant Pot. Then refrigerate the cheesecake for at least 6 hours, but we recommend refrigerating the cheesecake overnight for the best flavor and texture.

Topping the Cheesecake

Right before serving, you’ll top the cheesecake with a strawberry topping. Use as much as you’d like, but we used about 1/4 cup of topping. Then add the homemade strawberry crumbs to the top.

Can you freeze cheesecake?

Yes! We recommend freezing this strawberry crunch cheesecake without the topping. Allow the cheesecake to cool, then wrap in plastic wrap. Wrap again in foil and freeze for 2 months.

As with the only other Incredibles product I’ve tried (Mile High Mint), the dosages in a Strawberry Crunch are dependable. Taken on an empty stomach and followed by a fatty or oily food, a single 10mg piece yields a legit experience. This type of high will last around 4-6 hours and allow me to develop and revise projects. Depending on your sensitivity, this candy is good for getting through the anxiety of a long social event or another dull work day.

The only reason I knocked a star is because this candy has a strong cannabis taste. That’s just me, though. That cannabis taste might be what you love most about this flavor. I had a bias against it due to the fact that I’d tried the Mile High Mint first, and mint will overpower almost anything. So my first experience with edibles suggested that a really good edible would not taste like weed. This one does at the expense of the strawberry flavor, but it’s not a deal-breaker by any means.
